Environmental justice is an increasingly important component of environmental and public health education, yet students often struggle to connect classroom concepts to real-world community challenges. To address this gap, community-based environmental justice projects were integrated into an undergraduate Environmental Toxicology and Health Laboratory course. Through partnerships with local organizations, students investigated issues such as air quality, soil contamination, urban green spaces, and environmental health disparities in underserved neighborhoods. Students collected and analyzed environmental data, engaged with community stakeholders, and applied concepts including exposure assessment, risk characterization, and environmental monitoring to authentic scenarios. This Microbrew will present a scalable model for integrating environmental justice and community-engaged learning into laboratory courses. Attendees will explore project design, assessment strategies, lessons learned, and student outcomes, and will leave with adaptable activities and resources for environmental science, microbiology, and public health education.
